Quesadillas are a traditional Mexican appetizer.  They can be assembled ahead of time and grilled just before serving. 

 

1 1/3 cups       finely chopped cooked chicken, turkey or ham 500 g
1 green, red, or yellow pepper, finely chopped          1
1¾ cups         shredded Monterey Jack or Cheddar cheese       425 mL
1 cup              Old El Paso* Thick N’ Chunky Salsa                  250 mL
1 pkg               Old El Paso* 8 Large Flour Tortilla 334g
1 pkg sour cream 1 pkg

In a medium bowl, combine chicken, pepper, cheese and salsa.  Mix well.  Place 4 tortillas on counter and spread approximately 1 cup (250 mL) chicken mixture on top of each tortilla.  Top with a second tortilla.  In a non-stick skillet, grill until tortillas are golden brown on both sides grill tortillas on both sides until golden brown.  Keep warm in 250oF (120oC ) oven.  Repeat with remaining tortillas.   Cut into wedges and serve with sour cream and extra salsa for dipping.

Makes 8 appetizer or 4 main dish servings.

TIPS :

1 1/3 cup (325 mL) cooked chicken is equal to ½ lb (250 g) uncooked boneless chicken. 

Quesadillas can be grilled on the barbecue instead of a skillet.
