Quesadillas are a traditional Mexican appetizer. They can be assembled ahead of time and grilled just before serving. |

In a medium bowl, combine chicken, pepper, cheese and salsa. Mix well. Place 4 tortillas on counter and spread approximately 1 cup (250 mL) chicken mixture on top of each tortilla. Top with a second tortilla. In a non-stick skillet, grill until tortillas are golden brown on both sides grill tortillas on both sides until golden brown. Keep warm in 250oF (120oC ) oven. Repeat with remaining tortillas. Cut into wedges and serve with sour cream and extra salsa for dipping. Makes 8 appetizer or 4 main dish servings.TIPS : 1 1/3 cup (325 mL) cooked chicken is equal to ½ lb (250 g) uncooked boneless chicken.
